ABC OF MAKING Soup.
Lean, juicy beef, mutton, and veal, form the basis of all good soups, so they suggested to get the pieces that is capable of the richest succulence, and such as the fresh-killed. In cold weather, each day may be enough.
Less nutritious barley from wheat, and many people are less friendly in the flavor. This is also quite low in the corner of the digestibility. Its starch cells that are less soluble, they offer more resistance against gastric juice.
There are several different types of barley, but most often is treated as a two-rowed, or two-eared barley. In general the structure of the barley grain resembles wheat and Oats.
Self-deprived of the outside hull, the grain is termed Scotch milled or pot barley. Still subject to further process outside the fibrous coat of the grain is removed, that is what is known as pearl barley. Pearl barley ground into flour is known as patent barley. Barley flour, owing to the fact that it contains so small a proportion of gluten, it must be wheaten flour mixed with bread-making for the purpose. When added to small amounts of whole-wheat bread, it has a tendency to keep the loaf moist, and thought by some to improve the taste.
The most common use made of this grain as food, is in the form of pearl, or Scotch, barley. When either boiled, barley requires about two hours for digestion.
